  • 1 c. shredded coconut
  • 2 c. diced cooked chicken
  • 1/2 c. cooked rice
  • 1/2 c. India relish
  • 1/4 c. mayonnaise
  • 1 Tbsp. light cream
  • 1 head lettuce
  • 1 can small pimiento, cut into strips

Instructions

  1. Combine shredded coconut, diced cooked chicken, cooked rice, and India relish in a bowl.
