Ingredients
- 3 lb. broiler-fryer chicken, cut up ⓘ
- 4 c. water ⓘ
- 1 1/2 tsp. salt ⓘ
- 1 tsp. curry powder ⓘ
- 1 tsp. lemon juice ⓘ
- 1/8 tsp. cloves ⓘ
- 1/8 tsp. mace ⓘ
- 1 medium onion, chopped ⓘ
- 2 Tbsp. margarine or butter ⓘ
- 2 Tbsp. all-purpose flour ⓘ
- 2 tomatoes, chopped ⓘ
- 1 medium carrot, thinly sliced ⓘ
- 1 apple, chopped ⓘ
- 1 green pepper, cut into 1/2-inch pieces ⓘ
- snipped parsley ⓘ
Instructions
- Remove any excess fat from the chicken.
- Combine chicken, giblets (except liver), neck, water, salt, curry powder, lemon juice, cloves, and mace in a Dutch oven.
- Bring to a boil over high heat.
- Reduce heat to low, cover, and simmer until the thickest pieces of chicken are cooked, about 45 minutes.
