Ingredients

  • 3 cups zucchini, cubed
  • 2 cups onion, diced
  • 2 teaspoons curry powder
  • 1/2 teaspoon garlic powder
  • 1 clove garlic, crushed
  • 3 cups chicken broth
  • 1/4 cup white wine
  • 1/2 cup cream
  • 1 cup sour cream
  • salt
  • pepper

Instructions

  1. Saute diced onion in 1/2 stick of margarine until translucent.
  2. Add cubed zucchini, curry powder, crushed garlic, and chicken broth to the onion and bring to a simmer.
  3. Simmer the mixture for 45 to 60 minutes until the vegetables are tender.
  4. Puree the soup in a blender or food processor until smooth.
  5. Allow the soup to cool slightly, then stir in cream, sour cream, salt, pepper, and a dash of dill.
  6. Add milk gradually to adjust the soup's consistency to your liking.
  7. Chill the soup for at least 6 hours before serving.
