Ingredients

  • 1 large onion, chopped
  • 2 cloves garlic, minced
  • 1/3 cup all-purpose flour
  • 1 to 2 tablespoons curry powder
  • 2 teaspoons instant chicken bouillon granules
  • 1/8 teaspoon ground red pepper
  • 2 cups milk
  • 3 cups cooked chicken, cubed
  • hot cooked rice

Instructions

  1. Place onion and garlic in a 1 3/4-quart casserole dish.
  2. Cook covered for 2 minutes on High until onion is tender.
  3. Stir in flour, curry powder, bouillon granules, and red pepper.
  4. Add milk all at once.
  5. Cook uncovered on High for 5 minutes until mixture thickens and bubbles, stirring twice.
  6. Stir in cooked chicken.
  7. Cook for 2 minutes more.
  8. Serve over hot cooked rice with chopped peanuts and sliced green onions.
