Ingredients

  • 3 Tbsp. tomato sauce
  • 3 Tbsp. plain yogurt
  • 4 cloves garlic
  • 1-inch cube fresh ginger
  • 4 chicken legs
  • 1 whole chicken breast
  • 6 Tbsp. oil
  • 1 cinnamon stick
  • 2 bay leaves
  • 5 whole cardamom pods
  • 5 whole cloves
  • 2 hot dried red peppers
  • 1 tsp. ground turmeric
  • 1 tsp. salt
  • 1/8 tsp. pepper
  • 1 Tbsp. lemon juice

Instructions

  1. In a small bowl, combine tomato sauce, yogurt, and 1 cup of water.
  2. Mix well and set aside.
  3. Put garlic and ginger into a blender along with 2 tablespoons of water.
  4. Blend into a smooth paste.
  5. Divide the chicken legs into thigh and drumstick portions.
  6. Quarter the chicken breast and remove the skin.
  7. Heat oil in a heavy-bottomed 10 to 12-inch casserole-type pot over medium-high heat.
  8. Fry the chicken pieces until golden brown.
  9. Add cinnamon stick, bay leaves, cardamom pods, cloves, and red peppers into the same oil used for frying.
  10. Stir once to combine and release the spices' aroma.
  11. Pour in the garlic-ginger paste from the blender (be cautious of splattering) and add turmeric.
  12. Stir and fry for about a minute.
  13. Add the fried chicken, tomato sauce mixture, salt, pepper, and lemon juice to the pot.
  14. Bring the mixture to a boil.
  15. Cover the pot, lower the heat, and simmer gently for 20 to 25 minutes, turning the chicken gently halfway through.
