Ingredients

  • 1 lb navy beans
  • 6 whole cloves
  • 1 medium onion
  • 6 slices bacon
  • 1/2 cup unsulphered molasses
  • 1/4 cup dark brown sugar
  • 1 tablespoon dry mustard
  • 1/2 teaspoon ground ginger
  • 1/2 teaspoon salt

Instructions

  1. Remove and discard any stones from the navy beans; rinse and drain.
  2. In a 2 1/2-quart casserole, combine beans and 6 cups water.
  3. Microwave, covered on High for 16 to 22 minutes, until boiling. Cook on High for an additional 2 minutes.
  4. Remove from microwave and let stand covered for 1 hour.
  5. Cook covered at Medium (50% power) for 30 to 40 minutes, until beans are tender but not soft.
  6. Press cloves into the onion; add the onion and remaining ingredients to the casserole.
  7. Cook covered on High for 30 to 40 minutes, stirring 4 times until beans are soft.
  8. If desired, remove and discard the onion before serving.
