Ingredients

  • 3.5 lb. broiler chicken
  • 2 Tbsp. rendered chicken fat or vegetable oil
  • 1 c. sliced celery
  • 4 c. water
  • 1 tsp. salt
  • 1/4 tsp. pepper
  • 3 medium potatoes

Instructions

  1. Brown the chicken on all sides in a Dutch oven using chicken fat or vegetable oil. Remove the chicken and set aside.
  2. Add giblets to the fat and brown well.
  3. Spoon off all excess fat.
  4. Add sliced celery to the pot and cook for 1 minute.
  5. Stir in water, salt, and pepper.
  6. Return the chicken to the Dutch oven.
  7. Bring to a boil.
  8. Cover and simmer for 20 minutes.
  9. Add the peeled potatoes and cook for 10 minutes.
  10. Add beans and cook until tender.
  11. Remove the chicken, debone, and cut into chunks to serve.
