Ingredients

  • 1 1/2 lb. small turnips
  • 3 Tbsp. butter or margarine
  • 3/4 cup beef broth
  • 1 Tbsp. fresh lemon juice
  • 2 Tbsp. parsley, chopped

Instructions

  1. Peel the turnips and cut them into 1/2-inch thick slices.
  2. Melt butter in a skillet and add the sliced turnips.
  3. Cook over low heat until they are barely tender.
  4. Add beef broth to the skillet, cover, and simmer over low heat until the turnips are tender, about 15 minutes.
  5. Remove the lid and allow some of the broth to cook down, leaving a small amount of sauce.
  6. Sprinkle with lemon juice and chopped parsley before serving.
