Ingredients

  • 4 chicken breasts
  • 1/4 cup butter or margarine
  • 1/3 cup warm apricot brandy
  • 3/4 cup chicken broth
  • 1/2 cup sour cream
  • 1/4 teaspoon tarragon leaves, crushed
  • 1/2 cup flour
  • 1/4 teaspoon salt
  • 1/8 teaspoon pepper

Instructions

  1. Coat chicken breasts with tarragon, flour, salt, and pepper mixture.
  2. Melt butter in a large frypan over medium heat.
  3. Add coated chicken breasts and turn every 10 minutes; cook until browned.
  4. Add warm apricot brandy and light it carefully.
  5. Stir in chicken broth.
  6. Cover and simmer for 10 minutes.
  7. Remove chicken from pan and set aside.
  8. Add sour cream to the pan and warm through.
  9. Pour the sauce over the chicken before serving.
