Ingredients

  • 8 lb. standing rib roast
  • 4 to 6 cloves garlic
  • 1/4 c. soy sauce
  • 1 Tbsp. freshly ground pepper
  • 1 c. brandy
  • 1 c. beef stock
  • fresh oregano sprigs

Instructions

  1. Using a sharp knife, make 1-inch deep slits evenly spaced over the entire surface of the roast and insert garlic slivers.
  2. Place the roast in a roasting pan.
  3. Brush the outside of the roast with soy sauce.
  4. Sprinkle with freshly ground pepper.
  5. Let the roast stand at room temperature for 1 hour.
  6. Preheat the oven as needed and roast the prime rib to desired doneness.
  7. In a saucepan, combine brandy and beef stock, then simmer to create a gravy.
  8. Add fresh oregano and thyme sprigs for flavor.
  9. Serve the sliced prime rib with the brandy gravy.
