Ingredients

  • 3 cups whole Brazil nuts
  • 2 packages (7 1/2 oz.) pitted dates
  • 1 cup maraschino cherries, drained
  • 3/4 cup sifted flour
  • 3/4 cup sugar
  • 3 eggs, beaten
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 tablespoon vanilla

Instructions

  1. Mix together the Brazil nuts, pitted dates, and drained maraschino cherries.
  2. Sift the flour, sugar, baking powder, and salt over the nut and fruit mixture and mix well.
  3. Add the beaten eggs and vanilla, then mix again until combined.
  4. Pour the batter into a lined loaf pan.
  5. Bake in a preheated oven at 300°F (150°C) for 1 ¾ to 2 hours or until a toothpick inserted in the center comes out clean.
