Ingredients

  • 2 beaten eggs
  • 1 Tbsp. milk
  • 1/4 tsp. salt
  • dash of pepper
  • 4 medium tomatoes
  • 1 c. crushed saltine crackers
  • 2 to 3 Tbsp. cooking oil
  • 1/2 c. shredded sharp American cheese

Instructions

  1. Combine beaten eggs, milk, salt, and pepper in a bowl.
  2. Cut tomatoes into 3/4-inch thick slices.
  3. Dip tomato slices in crushed saltine crackers, then in egg mixture, and again in cracker crumbs.
  4. Fry the breaded tomato slices in hot oil until browned.
  5. Sprinkle shredded cheese over the fried tomato slices.
  6. Cover and cook over very low heat until the cheese is melted.
