Ingredients

  • 4 potatoes, peeled and shredded
  • 1/2 lb. bologna, cut into strips
  • 1 green pepper, cut into strips
  • 4 eggs
  • salt
  • pepper

Instructions

  1. Fry the shredded potatoes in a skillet with 2 tablespoons of oil until they are browned.
  2. Add the bologna strips to the skillet and cook until they are browned.
  3. Add the green pepper strips, then season with salt and pepper to taste.
  4. Beat the eggs and scramble them into the potato mixture, cooking until eggs are set.
