Breakfast Muffin Bars
Ingredients
- 1 1/2 cups all-purpose flour ⓘ
- 1 1/2 cups all-bran cereal ⓘ
- 1/3 cup sesame seeds ⓘ
- 1 tablespoon baking powder ⓘ
- 1 teaspoon cinnamon ⓘ
- 1 teaspoon allspice ⓘ
- 1/2 teaspoon baking soda ⓘ
- 1 pinch salt ⓘ
- 1 egg ⓘ
- 3/4 cup buttermilk ⓘ
- 1/2 cup packed brown sugar ⓘ
- 1/3 cup vegetable oil
- 2 tablespoons molasses ⓘ
- 1 1/2 cups finely grated carrots ⓘ
- 1/2 cup chopped dates ⓘ
Instructions
- MIX flour, cereal, sesame seeds, baking powder, cinnamon, allspice, baking soda and salt in large bowl.
- WHISK together egg, buttermilk, brown sugar, vegetable oil and molasses.
- STIR liquid mixture into dry ingredients, stirring just until moistened.
- Fold in carrots and dates.
- Spread evenly in greased 13 x 9 inch baking pan.
- Bake at 350°F for 25 to 30 minutes or until centre springs back when gently touched.
- Cool on rack.
- Cut into bars.
- Store in airtight container.
