Ingredients

  • 6 to 7 lb. brisket
  • 1/2 tsp. salt
  • 1/8 tsp. pepper
  • 2 medium onions
  • 4 carrots
  • 4 potatoes
  • 1 cup water

Instructions

  1. Preheat oven to 350°F (175°C).
  2. Sprinkle beef with salt and pepper. Place in a large skillet.
  3. Brown meat on the fat side over high heat.
  4. While meat is browning, pare carrots and potatoes, then cut into chunks. Slice onions.
  5. Remove meat from skillet and place in a large roasting pan.
  6. Add onions to the skillet and sauté until golden brown.
  7. Spoon onions over the meat in the roasting pan.
  8. Surround the meat with carrots, potatoes, and onions.
  9. Add 1 cup water to the roasting pan.
  10. Cover and roast in the oven for 2.5 to 3 hours, or until the meat is tender.
