Ingredients

  • 1 box Jiffy corn muffin mix (yellow)
  • 3 eggs
  • 1 small box broccoli, chopped, drained
  • 1 big onion, chopped
  • 1 cup grated cheese
  • 1 stick margarine

Instructions

  1. Preheat the oven and prepare a muffin pan with liners or non-stick spray.
  2. In a large mixing bowl, combine the Jiffy corn muffin mix, eggs, chopped drained broccoli, chopped onion, grated cheese, and melted margarine.
  3. Mix all ingredients until well combined.
  4. Divide the batter evenly among the muffin cups.
  5. Bake in the preheated oven for approximately 20 minutes or until a toothpick inserted in the center comes out clean.
  6. Allow to cool slightly before serving.
