Ingredients

  • 1 box Jiffy mix cornbread
  • 1 package chopped spinach or chopped broccoli, thawed and drained
  • 1/2 onion, finely chopped
  • 1/2 Tbsp. salt
  • 3/4 stick butter or margarine
  • 4 eggs

Instructions

  1. Combine the Jiffy mix cornbread with the chopped spinach or broccoli in a mixing bowl.
  2. Sauté the finely chopped onion and salt in 3/4 stick of butter until translucent and fragrant.
  3. Add the sautéed onion and butter mixture to the cornmeal and vegetable mixture, stirring to combine.
  4. Pour the batter into a greased 9-inch pie plate.
  5. Bake at 400°F for 25 to 30 minutes, or until golden brown and cooked through.
