Broccoli Quiche(Microwave)

- Finely chop the broccoli and mince the onion.
- In a 9-inch quiche dish, cook the broccoli and onion, covered, on High for 5 minutes.
- Set aside. Heat the half and half on 50% power for 2 minutes.
- In a bowl, beat the half and half and eggs together.
- Stir in the shredded Swiss cheese and pepper.
- Pour the egg mixture over the vegetables in the dish. Stir gently to combine.
- Elevate the dish on a rack or inverted plate. Cook on medium power for 14 minutes until a knife inserted comes out clean, rotating the dish twice during cooking.
- Let stand for 10 minutes before serving.
