Broccoli Quiche(Microwave)

Ingredients

  • 1 small bunch broccoli (about 1 lb.)
  • 1 small onion
  • 1/2 cup half and half
  • 4 eggs
  • 2 cups shredded Swiss cheese

Instructions

  1. Finely chop the broccoli and mince the onion.
  2. In a 9-inch quiche dish, cook the broccoli and onion, covered, on High for 5 minutes.
  3. Set aside. Heat the half and half on 50% power for 2 minutes.
  4. In a bowl, beat the half and half and eggs together.
  5. Stir in the shredded Swiss cheese and pepper.
  6. Pour the egg mixture over the vegetables in the dish. Stir gently to combine.
  7. Elevate the dish on a rack or inverted plate. Cook on medium power for 14 minutes until a knife inserted comes out clean, rotating the dish twice during cooking.
  8. Let stand for 10 minutes before serving.
