Ingredients

  • 6 medium unpeeled baking potatoes
  • 1 tsp. margarine
  • 3 stalks broccoli
  • 1/3 cup skim milk
  • 1 cup no-fat grated Cheddar
  • 1 tsp. salt

Instructions

  1. Preheat oven to 400°F.
  2. Brush the skins of the potatoes with margarine and score them down the middle lengthwise.
  3. Bake the potatoes for 45 to 60 minutes or until tender.
  4. Steam broccoli stalks for 6 to 8 minutes or until just tender.
  5. Chop the broccoli finely.
  6. Carefully slice the baked potatoes in half lengthwise and scoop the flesh into a bowl, reserving the skins.
  7. Add chopped broccoli, 1/2 cup of grated Cheddar, skim milk, salt, and pepper to the potato flesh.
  8. Mash the mixture until pale green with dark flecks.
  9. Spoon the mixture into the reserved potato skins and sprinkle with remaining cheese.
  10. Place the stuffed potatoes on a baking sheet and bake for 10 minutes.
  11. Turn on the broiler and broil the potatoes for 1 minute or until the tops are golden brown.
