Broiled basil eggplant features tender, lightly browned slices topped with melted cheese and a fresh herb drizzle, perfect for a flavorful vegetarian appetizer or light side dish.

Ingredients

  • 1/4 cup olive oil
  • 2 tablespoons lemon juice
  • 2 tablespoons parsley
  • 2 tablespoons chopped basil
  • salt
  • pepper
  • 8 large eggplant slices (1/3-inch thick)

Instructions

  1. Whisk together 1/4 cup olive oil, lemon juice, parsley, and chopped basil.
  2. Brush 3 tablespoons olive oil on both sides of the eggplant slices.
  3. Season with salt and pepper, then broil until tender and light brown, turning once.
  4. Arrange the broiled eggplant slices overlapping on an ovenproof platter.
  5. Top with cheese slices.
  6. Broil until the cheese melts.
  7. Whisk the olive oil and lemon juice mixture again and spoon over the eggplant garnished with fresh basil before serving.
