Ingredients

  • 1 small zucchini, sliced
  • 1 small eggplant, sliced
  • 1 medium onion, sliced
  • 1 green pepper, sliced
  • 1 cup sliced fresh mushrooms
  • 2 medium tomatoes, chopped
  • 1/4 cup tomato juice
  • garlic powder, salt and pepper to taste

Instructions

  1. Combine all ingredients in a covered saucepan.
  2. Simmer for 15 minutes or until tender.
  3. Drain before serving.
