Ingredients

  • 1 1/2 lb. fish fillets
  • 1/2 cup mayonnaise
  • 3 teaspoons grated Parmesan cheese
  • 2 tablespoons Dijon-style mustard
  • freshly ground pepper
  • chopped fresh parsley

Instructions

  1. Rinse fish fillets and pat dry.
  2. Line a cookie sheet or baking dish with foil.
  3. In a bowl, combine mayonnaise, Parmesan cheese, Dijon mustard, and freshly ground pepper.
  4. Spread the mixture evenly over the fish fillets.
  5. Broil about 5 inches from the heat source for 4 to 8 minutes, or until the fish flakes easily with a fork.
  6. Sprinkle chopped fresh parsley over the broiled fish.
  7. Serve immediately.
