Ingredients

  • 1 c. olive oil
  • 1/2 c. fresh lemon juice
  • 1 large onion, thinly sliced
  • 4 cloves garlic, minced
  • 1/2 c. fresh Italian parsley, chopped
  • few sprigs of fresh oregano
  • salt
  • freshly ground pepper
  • 1 leg of lamb (about 9 lb.), butterflied

Instructions

  1. Combine all ingredients except for the lamb in a bowl.
  2. Mix well and pour the marinade over the lamb in a glass dish.
  3. Turn the lamb to coat it thoroughly with the marinade.
  4. Refrigerate overnight, turning occasionally.
