Ingredients

  • 5 Tbsp. olive or vegetable oil
  • juice of 1 lemon
  • 1 Tbsp. chopped fresh parsley
  • 1 1/4 tsp. dried oregano
  • 1/2 tsp. salt
  • 1/4 tsp. pepper
  • 1 lb. leg of lamb, cut into 2-inch cubes
  • 1 yellow squash, halved lengthwise and cut into chunks
  • 1 zucchini
  • 1 pt. cherry tomatoes

Instructions

  1. In a large bowl, combine olive or vegetable oil, lemon juice, chopped fresh parsley, dried oregano, salt, and pepper.
  2. Add lamb cubes to the marinade and turn to coat evenly.
  3. Cover and refrigerate for 2 hours or overnight.
  4. Thread the marinated lamb, yellow squash, zucchini, and cherry tomatoes onto skewers.
  5. Grill or broil the kebabs until the lamb is cooked to desired doneness and vegetables are tender, about 10-15 minutes, turning as needed.
