Ingredients

  • 2 1/2 lb. round red potatoes
  • 2 Tbsp. vegetable oil
  • 1 1/2 Tbsp. minced fresh garlic
  • 1/3 c. shredded fresh basil
  • 1 tsp. ground pepper
  • 1/2 tsp. salt
  • 2 lb. green beans
  • 3 or 4 slices bacon
  • 1 tsp. salt

Instructions

  1. Break the green beans into smaller pieces, then wash and place them into a pot.
  2. Add water and salt to the pot with green beans.
  3. Bring to a boil and cook for about 2 hours or until tender.
  4. While green beans are cooking, prepare the potatoes: heat vegetable oil in a skillet.
  5. Add minced fresh garlic and shredded fresh basil to the skillet.
  6. Add the red potatoes and cook until they are tender and coated with the basil and garlic mixture.
  7. Cook bacon slices until crispy, then crumble and set aside.
  8. Season potatoes with ground pepper and salt as needed before serving.
