Ingredients

  • 1 box raisins
  • 3 cups water
  • 6 tablespoons vegetable shortening
  • 1 teaspoon vanilla
  • 3 1/2 cups flour
  • 1 1/2 cups brown sugar
  • 3 teaspoons soda
  • 1 teaspoon salt
  • 1 cup chopped walnuts

Instructions

  1. Cook raisins in 3 cups water in a pan with a tight lid for 10 minutes.
  2. Cool the raisin mixture.
  3. Add vegetable shortening, eggs, and vanilla to the cooled mixture.
  4. Mix together dry ingredients and add the liquid mixture.
  5. Mix until thoroughly combined.
  6. Grease and dust six mini loaf pans or cans with flour.
  7. Pour the batter into the prepared pans.
  8. Bake at 350°F (175°C) for about 1 hour or until a toothpick inserted in the center comes out clean.
