Ingredients

  • 1 medium onion, chopped
  • 3 cloves garlic, finely chopped
  • 1 Tbsp. olive oil
  • 1 1/2 c. cooked brown rice
  • 1 1/4 c. spring water
  • 1/2 c. natural orange juice
  • 1/4 c. sliced water chestnuts
  • 3 Tbsp. tamari or low sodium soy sauce
  • 2 c. broccoli florets
  • 1 c. sliced mushrooms

Instructions

  1. In a microwave-safe dish, combine chopped onion, garlic, and olive oil. Cook, uncovered, on High for 1 minute.
  2. Stir in cooked brown rice, orange juice, water chestnuts, and tamari or soy sauce.
  3. Microwave, uncovered, on High for 5 minutes.
  4. Stir in broccoli florets and sliced mushrooms.
  5. Cover and cook on High for 4 to 5 minutes until liquid is absorbed and vegetables are tender.
