Ingredients

  • 6 egg whites
  • 3 cups pecans or coconut
  • 1 1/2 cups flour
  • 1 box brown sugar
  • 1 teaspoon vanilla
  • 1 teaspoon baking powder

Instructions

  1. Beat the egg whites until stiff but not dry.
  2. Slowly add brown sugar and vanilla to the egg whites and mix well.
  3. Fold in the flour and baking powder.
  4. Add the pecans or coconut into the batter.
  5. Pour the batter into a tube pan.
  6. Bake in a 325°F oven for 45 minutes.
