Ingredients

  • 1 1/2 c. medium diced, cooked turkey white meat
  • 2 1/2 c. medium diced, cooked turkey dark meat
  • 1 c. finely diced, boiled potatoes
  • 4 Tbsp. finely diced onions (optional)
  • 1/4 to 1/2 c. clarified butter
  • 1/4 tsp. paprika
  • chopped parsley

Instructions

  1. Mix turkey, potatoes, and onions in a bowl.
  2. Season with salt and pepper to taste.
  3. Heat clarified butter in a 7‑inch frypan until it begins to brown.
  4. Stir in paprika.
  5. Add the turkey mixture, pressing it firmly into the pan.
  6. Cover and reduce heat to medium.
  7. Cook 5 to 7 minutes or until edges brown, adding more butter if needed.
  8. Transfer to a heated plate.
  9. Garnish with chopped parsley.
