Ingredients

  • 4 toasted English muffins
  • 1 (4 1/2 oz.) can deviled ham
  • 3/4 cup grated Cheddar cheese
  • 1 teaspoon Dijon mustard
  • 2 eggs
  • 1/4 teaspoon salt

Instructions

  1. Spread deviled ham on muffin halves.
  2. Sprinkle with grated Cheddar cheese.
  3. Place the muffins on a baking sheet.
  4. Beat egg yolks with Dijon mustard, salt, pepper, and Tabasco until thick and lemony.
  5. Beat egg whites until stiff peaks form.
  6. Fold the beaten whites into the yolk mixture.
  7. Spoon the egg mixture onto the prepared muffins.
  8. Bake at 350°F for 12 to 15 minutes.
