Ingredients

  • 1 dozen quahog clams
  • 3 slices bacon
  • 1 large onion
  • 3 tablespoons flour
  • 3 tablespoons butter
  • 1 to 2 cups raw diced potatoes
  • 2 to 3 cups clam juice
  • 2 cups milk
  • 1 cup light or heavy cream
  • 2 teaspoons thyme
  • 2 bay leaves

Instructions

  1. Wash and open the clams, reserving the liquid.
  2. In a large pot, sauté the bacon over low heat until cooked through.
  3. Remove the bacon slices and reserve.
  4. Mince the clams and the onion.
  5. Saute the minced clams and onion in the bacon fat in the pot.
  6. Add the thyme to the mixture.
  7. Sprinkle the flour into the mixture and stir well.
  8. Add the clam juice, bay leaves, and diced potatoes.
  9. Crumble the reserved bacon and add it to the pot.
  10. Cook until the potatoes are tender.
  11. Add the milk, cream, and butter.
  12. Do not let the mixture boil after adding the dairy.
  13. Adjust seasoning as needed and serve.
