Buck Eyes are rich, peanut butter and chocolate confections with a creamy interior and a chocolate coating, perfect for sweet tooth gatherings or homemade gift-giving.

Ingredients

  • 1 lb. butter softened
  • 2 lb. jar peanut butter
  • 2 tsp. vanilla
  • 2 lb. powdered sugar
  • 13.5 oz. graham cracker crumbs
  • 1/4 to 1/2 cup chocolate block
  • 1 large bag chocolate chips

Instructions

  1. In a large bowl, mix softened butter, peanut butter, and vanilla with an electric mixer.
  2. In another bowl, combine powdered sugar and graham cracker crumbs.
  3. By hand, mix the crumb mixture into the creamed mixture until no sugar is visible.
  4. Roll small amounts of the mixture into balls the size of buckeye nuts and place them on waxed paper on a tray.
  5. Refrigerate the tray for several hours to firm the balls.
  6. In a double boiler, melt chocolate blocks and paraffin wax, then stir in chocolate chips.
  7. Pierce each ball with a toothpick and roll in the melted chocolate mixture until just a small portion of the ball is not covered.
  8. Remove the balls from the chocolate and place them back on waxed paper.
  9. Refrigerate again until the coating is set.
