Buck Eyes
Buck Eyes are rich, peanut butter and chocolate confections with a creamy interior and a chocolate coating, perfect for sweet tooth gatherings or homemade gift-giving.

- In a large bowl, mix softened butter, peanut butter, and vanilla with an electric mixer.
- In another bowl, combine powdered sugar and graham cracker crumbs.
- By hand, mix the crumb mixture into the creamed mixture until no sugar is visible.
- Roll small amounts of the mixture into balls the size of buckeye nuts and place them on waxed paper on a tray.
- Refrigerate the tray for several hours to firm the balls.
- In a double boiler, melt chocolate blocks and paraffin wax, then stir in chocolate chips.
- Pierce each ball with a toothpick and roll in the melted chocolate mixture until just a small portion of the ball is not covered.
- Remove the balls from the chocolate and place them back on waxed paper.
- Refrigerate again until the coating is set.
