Ingredients

  • 1 lb. kielbasa sausage, cut in small chunks
  • 2 tsp. pimentos
  • 1 tsp. salt
  • 1 tsp. crushed red pepper
  • 1 tsp. crushed garlic
  • 1/2 tsp. ground red pepper
  • 2 pkg. yellow rice coloring
  • 2 cups rice
  • 2 onions, sliced
  • 2 Tbsp. butter
  • 2 to 3 Tbsp. olive oil

Instructions

  1. Combine in a large pot 5 cups water, salt, yellow rice coloring, crushed garlic, pimentos, crushed red pepper, ground red pepper, kielbasa, sliced onions, butter, and olive oil.
  2. Bring to a boil, then add the rice.
  3. Cover, turn the heat to low, and simmer for 20 to 25 minutes until almost all water is gone.
  4. Remove from heat, uncover, and let sit for 5 minutes before serving.
