Instructions

  1. Combine chopped pecans, Brazil nuts, candied pineapple, chopped raisins, chopped dates, and chopped cherries in a large mixing bowl; add 1 cup of flour and mix well.
  2. In a separate bowl, combine remaining 1 cup of flour, sugar, baking powder, salt, cinnamon, and nutmeg; mix well.
  3. Add beaten eggs to the dry mixture and beat with an electric mixer until well blended.
  4. Add the egg mixture to the fruit and nut mixture, stirring thoroughly to combine.
  5. Spoon the batter into a greased and brown paper-lined 10-inch tube pan.
  6. Bake at 275°F (135°C) for 2 1/2 hours or until a wooden pick inserted in the center comes out clean.
  7. Allow the cake to cool completely in the pan.
  8. Remove the cake from the pan and peel off the brown paper.
  9. Wrap the cake in cheesecloth soaked in 1/2 cup of Burgundy wine and store in an airtight container for at least one week before serving.
