Ingredients

  • 1 1/2 cups sugar
  • 1 1/2 cups rich milk
  • 2 eggs
  • 1/4 teaspoon cream of tartar
  • 1 (9-inch) pie shell
  • 3 tablespoons all-purpose flour
  • 1 tablespoon butter or shortening
  • 2 pinches salt
  • 1 teaspoon vanilla

Instructions

  1. Sprinkle 3/4 cup sugar into a skillet over medium heat and caramelize until golden brown.
  2. Stir constantly until the sugar is fully caramelized.
  3. Add the hot scalded milk to the caramelized sugar and stir well.
  4. Combine 3/4 cup sugar and flour in a bowl.
  5. Beat the egg yolks until foamy.
  6. Add just enough warm milk to the egg yolks to make a runny paste.
  7. Pour this mixture slowly into the hot milk mixture, stirring constantly until it thickens.
  8. Add vanilla and a pinch of salt, then pour the filling into the pie shell.
  9. In a separate bowl, beat egg whites, adding about 1/4 cup sugar, a pinch of salt, and 1/2 teaspoon cream of tartar until stiff peaks form.
  10. Spread the meringue on top of the pie, sealing the edges.
  11. Bake at 350°F (175°C) for 20 minutes until the meringue is a light golden brown.
