- Sprinkle 3/4 cup sugar into a skillet over medium heat and caramelize until golden brown.
- Stir constantly until the sugar is fully caramelized.
- Add the hot scalded milk to the caramelized sugar and stir well.
- Combine 3/4 cup sugar and flour in a bowl.
- Beat the egg yolks until foamy.
- Add just enough warm milk to the egg yolks to make a runny paste.
- Pour this mixture slowly into the hot milk mixture, stirring constantly until it thickens.
- Add vanilla and a pinch of salt, then pour the filling into the pie shell.
- In a separate bowl, beat egg whites, adding about 1/4 cup sugar, a pinch of salt, and 1/2 teaspoon cream of tartar until stiff peaks form.
- Spread the meringue on top of the pie, sealing the edges.
- Bake at 350°F (175°C) for 20 minutes until the meringue is a light golden brown.
