Burro Pie is a hearty, layered Mexican-inspired casserole featuring refried beans, cheese, seasoned ground beef, and crispy fried tortillas, perfect for a satisfying family meal.

Ingredients

  • 1 large can refried beans
  • 2 cups grated cheese
  • 1 (8 oz.) jar taco sauce
  • 1 medium onion, chopped
  • 6 (8-inch) flour tortilla shells
  • 1 lb. ground beef, cooked and drained

Instructions

  1. Fry the tortilla shells in butter, on both sides, until crispy.
  2. Combine the cooked ground beef, refried beans, chopped onion, and taco sauce in a frying pan and cook together.
  3. Layer the casserole starting with a layer of sauce in the bottom of the dish, then add fried shells, grated cheese, and the beef mixture.
  4. Repeat the layers until all ingredients are used, ending with a top layer of cheese.
  5. Make ahead for two to three hours, then cover and microwave on High for 10 to 12 minutes before serving.
