Butternut marshmallows combine toasted walnuts and sweet caramelized sugar coating, creating a rich, crunchy treat perfect for festive occasions or as a delightful snack.

Ingredients

  • 3/4 cup walnuts
  • 1 cup light brown sugar
  • 1/2 cup light cream
  • 1/2 teaspoon vanilla
  • 1/4 teaspoon salt
  • 24 marshmallows

Instructions

  1. Chop walnuts finely.
  2. Firmly pack brown sugar before measuring. Mix together sugar, cream, vanilla, and salt.
  3. Place over heat and slowly bring mixture to a boil, gently, until candy thermometer registers 238° or until a little candy dropped in cold water forms a soft ball.
  4. Drop in marshmallows, a few at a time, and turn with a fork until well coated.
  5. Remove and roll in chopped nuts.
