Ingredients

  • 1 cup butter or margarine
  • 3/4 cup firmly packed brown sugar
  • 1 teaspoon vanilla extract
  • 1/2 cup finely chopped pecans
  • 2 1/2 cups sifted all-purpose flour
  • 1/2 teaspoon baking powder
  • 3/4 cup chopped pistachios or walnuts
  • 1 cup caramel or butterscotch pieces

Instructions

  1. Melt butter, remove from heat and stir in brown sugar, vanilla extract, and finely chopped pecans.
  2. Sift together all-purpose flour and baking powder.
  3. Add the sifted dry ingredients to the butter mixture and mix until combined.
  4. Form the dough into 42 balls using rounded teaspoonfuls for each.
  5. Flatten one end of each ball by pressing on an ungreased cookie sheet and pinching the top to a point to resemble an acorn.
  6. Bake in a preheated moderate oven at 350°F for 15 minutes.
  7. Remove from oven and cool completely.
  8. Melt caramel or butterscotch pieces in a double boiler.
  9. Dip the flat end of each cookie into the melted butterscotch to a depth of 1/4 inch.
  10. Thoroughly coat the dipped end with chopped nuts.
