Ingredients

  • 4 medium eggs
  • 2 c. firmly packed brown sugar
  • 1 Tbsp. butter
  • 1 1/2 c. flour
  • 1 1/2 tsp. baking powder
  • 1 1/2 c. chopped nuts
  • 1 tsp. vanilla

Instructions

  1. Beat eggs with rotary beater in top of double boiler just until blended.
  2. Stir in brown sugar and butter.
  3. Place over rapidly boiling water, stirring constantly, until hot, about 5 minutes.
  4. Remove from heat.
  5. Sift together flour and baking powder.
  6. Add all at once to hot mixture.
  7. Mix well until blended.
  8. Stir in chopped nuts and vanilla.

Tips & Substitutions

For a richer flavor, consider using dark brown sugar instead of light brown sugar. If you're allergic to nuts, you can substitute with sunflower seeds for a similar crunch. Ensure the butter is melted before adding it to the egg mixture for even blending. If you don't have a double boiler, a heatproof bowl over a pot of simmering water works just as well. This recipe can also be made gluten-free by using a gluten-free flour blend.

Frequently Asked Questions

Can I use fresh cherries instead of chopped nuts?

Yes, you can substitute chopped nuts with fresh or dried cherries for a fruitier flavor. Just ensure to chop the cherries to bite-sized pieces and adjust the sugar slightly if using fresh cherries, as they may add more moisture.

What can I use if I don't have a double boiler?

If you don't have a double boiler, you can create one by placing a heatproof bowl over a saucepan filled with simmering water. Just make sure the bowl doesn't touch the water, allowing for gentle heating while you stir the mixture.

How do I know when the squares are done baking?

These squares will be done when the edges are set and a toothpick inserted in the center comes out clean or with a few moist crumbs. Be careful not to overbake, as they can become dry. Let them cool completely before cutting into squares.
