Ingredients

  • 2 cups flour
  • 1 cup sugar
  • 1 package (3.4 oz.) instant butterscotch pudding mix
  • 1 package (3.4 oz.) instant vanilla pudding mix
  • 1 cup water
  • 4 eggs
  • 3/4 cup vegetable oil
  • 1 teaspoon vanilla extract
  • 2/3 cup packed brown sugar

Instructions

  1. In a bowl, combine the flour, sugar, instant butterscotch pudding mix, and instant vanilla pudding mix.
  2. In a separate bowl, combine the water, eggs, vegetable oil, and vanilla extract.
  3. Stir the wet ingredients into the dry ingredients just until moistened.
  4. Fill greased muffin cups two-thirds full with batter.
  5. In a small bowl, combine the brown sugar, chopped pecans, and cinnamon, then sprinkle over the batter in each muffin cup.
  6. Bake at 350°F (175°C) for 15 to 20 minutes, or until a toothpick inserted into the center comes out clean.
