Ingredients

  • 1 pkg. frozen hash brown potatoes (large), thawed
  • 2 cans cream of mushroom soup
  • 1 pkg. Longhorn Colby cheese
  • onions, chopped
  • chopped green or red peppers

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a large mixing bowl, combine the thawed hash brown potatoes, cream of mushroom soup, chopped onions and peppers or onion soup mix if using.
  3. Stir in the Longhorn Colby cheese until well mixed.
  4. Transfer the mixture into a greased baking dish and spread evenly.
  5. Bake uncovered for approximately 45 minutes or until bubbly and golden on top.
  6. Serve hot and enjoy.
