Ingredients

  • 6 baking potatoes
  • 1/4 cup sour cream
  • 1/2 cup grated Cheddar cheese
  • 1/4 cup butter
  • 1/8 cup chives or parsley
  • 1 cup cooked carrots
  • 1 egg
  • salt

Instructions

  1. Bake the potatoes until tender.
  2. Cut a sliver off the top of each potato to create a shell.
  3. Scoop out the centers of the potatoes into a bowl.
  4. Add sour cream, grated Cheddar cheese, butter, chopped chives or parsley, cooked carrots, and the egg to the bowl.
  5. Beat with a mixer until blended, noting it won't be completely smooth.
  6. If needed, add a little hot milk to achieve desired consistency.
  7. Spoon the mixture back into the potato shells.
  8. Place the filled potatoes in the oven and heat until hot and crispy.
