- Bake the potatoes until tender.
- Cut a sliver off the top of each potato to create a shell.
- Scoop out the centers of the potatoes into a bowl.
- Add sour cream, grated Cheddar cheese, butter, chopped chives or parsley, cooked carrots, and the egg to the bowl.
- Beat with a mixer until blended, noting it won't be completely smooth.
- If needed, add a little hot milk to achieve desired consistency.
- Spoon the mixture back into the potato shells.
- Place the filled potatoes in the oven and heat until hot and crispy.
