Ingredients

  • 5 lb crawfish meat
  • 1 c flour
  • 1 1/2 sticks butter
  • 1 c chopped shallots
  • 1 c chopped white onions
  • 1 c diced celery
  • water
  • 2 Tbsp minced garlic
  • 1/2 tsp cayenne pepper
  • 1 tsp black pepper
  • 1/2 tsp thyme
  • 3 bay leaves
  • 2 Tbsp chopped parsley

Instructions

  1. Place butter in a saucepan and melt.
  2. Stir in flour and cook, stirring, to a golden brown to make a roux.
  3. Remove from heat and set aside.
  4. In a separate pot, sauté chopped shallots, white onions, diced celery, and minced garlic until tender.
  5. Add water to the vegetable mixture to desired consistency.
  6. Stir in cayenne pepper, black pepper, thyme, and bay leaves.
  7. Add crawfish meat and simmer until heated through and flavors meld.
  8. Remove bay leaves before serving.
  9. Garnish with chopped parsley and serve hot.
