Ingredients

  • 5 to 6 chicken thighs
  • 1 1/2 lb. Andouille sausage
  • 4 c. chopped onion
  • 3 chopped bell peppers
  • 1 chopped red or yellow pepper
  • 1 Tbsp. minced garlic
  • 3 1/2 tsp. salt
  • 1/2 tsp. pepper
  • 1/4 tsp. cayenne pepper
  • 2 bay leaves
  • 2 1/2 c. white rice
  • 1/2 c. cubed, smoked ham
  • 3 1/2 c. water or stock

Instructions

  1. Brown the sausage in a large, deep pot.
  2. Remove the sausage and add the chicken; cook until done.
  3. Remove the chicken and set aside.
  4. Add chopped onion, bell peppers, red or yellow pepper, and cubed smoked ham to the pot; cook until tender.
  5. Add minced garlic and cook for another minute.
  6. Stir in salt, pepper, cayenne pepper, and bay leaves.
  7. Return the sausage and deboned chicken to the pot; stir thoroughly.
  8. Add water or stock to cover the ingredients.
  9. Bring to a boil, then turn down the heat and cover.
  10. Cook for about 20 minutes until the rice is done, stirring occasionally to prevent sticking.
  11. Serve hot with salad and garlic bread.
