Ingredients

  • beef roast (tender cut)
  • garlic cloves
  • green onion
  • salt
  • cayenne pepper
  • black pepper
  • white pepper
  • paprika
  • Italian seasoning
  • butter or margarine, softened
  • Dijon mustard

Instructions

  1. Make small slits in the roast over all sides.
  2. Stuff a sliver of garlic and a piece of green onion into each slit.
  3. Rub softened butter over the entire roast, then spread Dijon mustard over all sides.
  4. Sprinkle the Cajun spices over the roast and pat them down to adhere.
  5. Bake in a 500°F oven uncovered for 15 minutes.
  6. Reduce oven temperature to 325°F, cover the roast, and bake for 1 to 1.5 hours, depending on the size and cut of meat.
