Calico Corn Salsa
Ingredients
- 1 1/2 cups frozen corn, thawed ⓘ
- 1 cup frozen peas, thawed ⓘ
- 1/2 teaspoon ground cumin ⓘ
- 1/8 teaspoon dried oregano ⓘ
- 1 tablespoon olive oil ⓘ
- 1 (15 ounce) can black beans, rinsed and drained ⓘ
- 1 medium tomatoes, chopped ⓘ
- 1/3 cup chopped red onion ⓘ
- 1/4 cup lime juice ⓘ
- 1 tablespoon Dijon mustard ⓘ
- 1 garlic clove, minced ⓘ
- 1/2 teaspoon salt ⓘ
- 2 tablespoons minced fresh cilantro ⓘ
- baked corn tortilla chips ⓘ
Instructions
- Combine corn and peas in large bowl.
- In nonstick skillet, cook cumin and oregano in oil over medium heat for 2 minutes; pour over corn mixture and stir to coat evenly.
- Stir in beans, tomato, and onion.
- Whisk lime juice, mustard, garlic, and salt together in small bowl; stir in cilantro.
- Pour over corn mixture and stir to coat.
- Serve with baked tortilla chips and refrigerate any leftovers.
