Ingredients

  • 16 oz. can mixed vegetables, drained
  • 1 1/3 cups water
  • 3/4 teaspoon salt
  • 1/4 teaspoon dried rosemary, crushed
  • 2 tablespoons butter
  • 1 1/3 cups quick cooking rice
  • 1 cup shredded Cheddar cheese
  • 1/2 teaspoon onion salt
  • 1/8 teaspoon pepper

Instructions

  1. Tear off a 36 x 18-inch piece of heavy-duty foil.
  2. Fold in half to make an 18-inch square.
  3. Fold up sides, using your fist to form a pouch.
  4. In a bowl, thoroughly combine vegetables, rice, water, cheese, salt, onion salt, rosemary, and pepper.
  5. Place the mixture in the foil pouch.
  6. Dot with butter.
  7. Fold edges of foil to seal the pouch securely.
  8. Grill over medium-hot coals for about 30 minutes or until done.
