Ingredients

  • 1 cup raw rice
  • 2 bay leaves
  • 1 medium onion
  • 2 cups sour cream
  • 1 cup cottage cheese
  • 1/2 teaspoon salt
  • 1 cup sharp cheese
  • 2 cans green chilies (1 hot; 1 medium or both medium)

Instructions

  1. Cook the rice with 2 bay leaves in water according to package instructions.
  2. Remove bay leaves after cooking.
  3. Sauté the onion in butter until translucent.
  4. Add the sautéed onion to the cooked rice.
  5. Mix in sour cream, cottage cheese, salt, green chilies, and sharp cheese.
  6. Pour the mixture into a buttered 13 x 11-inch casserole dish.
  7. Bake at 350°F for 35 to 40 minutes.
  8. Sprinkle the remaining sharp cheese on top and bake until melted.
