Ingredients

  • 2 (8-inch) pie crusts
  • 1/2 to 2/3 cup sugar
  • 2 1/2 tablespoons flour
  • 1/4 teaspoon cinnamon
  • 1/3 cup cherry juice
  • 2 1/2 cups pitted cherries

Instructions

  1. Mix sugar, flour, cinnamon, cherry juice, and pitted cherries in a saucepan.
  2. Cook over medium heat, stirring constantly, until mixture thickens and boils.
  3. Pour the hot thickened cherry mixture over the pitted cherries in the prepared pie crust.
  4. Dot the filling with 1 tablespoon of butter.
  5. Cover with the top crust, cutting slits in it for steam to escape.
  6. Bake until the crust is nicely browned and the juice begins to bubble through the slits.
  7. Cover the edges of the pie with aluminum foil to prevent over-browning.
  8. Serve warm.
