Ingredients

  • fish, skinned and cut into approximately 2-inch long pieces
  • 1 tsp. salt
  • 3 Tbsp. vinegar
  • 1 drop liquid smoke (to each pint)

Instructions

  1. Mix together salt, vinegar, and liquid smoke, then pour over the fish in jars.
  2. Seal the jars tightly.
  3. Process in a pressure cooker at 10 pounds of pressure for 90 minutes.
  4. The canned fish resembles canned salmon and is very good for making fish loaf.
